Roses are the traditional flower associated with Valentine's Day so are a perfect choice for cake decorations for this day and any day that is supposed to be romantic. Detailed realistic gum paste roses are absolutely gorgeous but you can also create pretty whimsical rolled roses easily for your cake design projects. These humble little blossoms are most effective made out of fondant because their contours are thicker and less delicate than gum paste designs. Rolled roses can be any color so give your creativity free rein with contrasting vibrant colors or a subtle pastel bouquet. Similar to real roses these rolled beauties can be full blown or tight tiny buds so make an assortment of different sizes.

To make pretty rolled roses you will need:

  • Fondant, either premade or homemade
  • Various gel colors
  • A cutting board
  • A sharp knife
  • A rolling pin
  • Cornstarch
  • A small rose leaf cutter, if you want leaves

Start by tinting your fondant in whatever colors are needed for the finished design. You can wear gloves if you don't want the gel colors to stain your skin. Simply add tiny amounts of gel color with toothpicks to balls of fondant and knead the color into it until there are no streaks. Wrap fondant balls tightly in plastic wrap until you are ready to use it so it does not harden.
