I once spent about 6 hours creating a perfectly quilted fondant covered heart shaped tiered wedding cake for a wedding show. I painstakingly measured the diagonal lines with a ruler and ticked the "stitches" onto the measurements with a pastry wheel. I indented the center points of each quilted section with a gum paste ball tool and glued three tiny dragees in the indent to create a heart shape. It was torturous but the effect was staggering and I got four orders for similar cakes. I didn't know whether to celebrate or cry when I considered the work involved!

I now can create the initial quilted pattern with imprint mats and save my sanity as well as spend more energy on other aspects of the cake. It is amazing what tools are available to create effects that took so much planning and effort in the past. One one hand the convenience is lovely but sometimes I miss that feeling of pride I felt when surveying a stunning accomplishment.
