One of the most important cake decorating techniques that you can master is learning to sculpt and carve cakes to create fantastic designs. There are many specialty cake pans that can be used to make specific shapes and characters which come with easy to follow instructions. These pans are great but truly spectacular sculpted cakes are created with layers of cake and icing and a sharp serrated knife. These knives can be used to cut your stacked cake layers into pretty much anything. Simply bake your sheet cakes, cool them, fill them with icing, stack them firmly and let cake chill completely before cutting your design.
Sculpting cake can be extremely messy because you are shearing off chunks of cake and icing so cover your work area with a cloth at least to make clean up more efficient. Take your time cutting because you want your cake to come off in clean lines not messy chunks or your design could be ruined. When you get skilled at this technique you can even stack sculpted shapes on top of each other with solid foundation elements to make more intricate designs. Your cake sculpture can be covered with fondant or layers of butter cream icing depending on your preference.
