I usually don't like to refer to myself as an old dog but when the age fits... I like to think I am up on all the various techniques that encompass cake design but like all professionals I have my favorite designs and often don't veer too far from my comfortable niche. I am a flower person. I absolutely love making gum paste flowers, the more realistic the better. Nothing thrills me more than a profusion of gorgeous blooms adorning a tasty cake a la Sylvia Weinstock or Lori Ann Blethen of Wildflowers.
I am aware of new trends and skills but sometimes I find something I've never done before and get really excited. I had to make realistic looking lace for a cake that draped like the most exquisite old fashioned wedding veil and discovered a technique called SugarVeil that produces gorgeous results. I spent a week making lace nonstop until I overdosed on sugar and icing. The moral of this story is no matter how experienced you are in a particular discipline you can always learn new skills and expand your cake decorating repertoire.
