One trend in cake design is to create shimmering glittering cake decorating elements using luster dust, edible glitter and dragees. This effect can be extremely elegant or flirty depending on the color and medium used on the cake. I like to use sparkle on cakes where it enhances the design but I am not inclined to create a disco ball like creation.

Many cake decorating professionals and home bakers use products to make their cakes glitter trusting that the products they buy are safe to consume. Recently bakers in the UK were warned that some sparkle used for cakes could have ground-up plastic or powdered brass in it and labels stating the product is "non-toxic" do not mean it is safe to eat. Bakers need to check what is in the sparkle they purchase and only purchase genuine edible cake products approved for use on food.
